Two airports serve Istanbul, and they are nowhere near each other. Istanbul Airport (IST) sits on the European side, Sabiha Gökçen (SAW) on the Asian side, and the whole city lies between them — which is why the most useful line on a Turkey itinerary is the three-letter code on the boarding pass rather than the word Istanbul. After that the country opens out fast: the ferry to Kadıköy, the coast road south past Kemer and Side, the four-in-the-morning drive to a balloon field outside Göreme. The catch is a border rather than a mountain. Turkey lies outside the EU roaming area, so the Roam Like At Home rules that make a Munich-to-Lisbon trip unremarkable do not reach this frontier.
A German, Austrian or French contract that has felt free all summer falls back here on whatever it says about countries outside that area, background data included — which is why two people on the same flight to Antalya can pay very differently for the same week. Almost everyone flying in loses the same shortcut

Nothing on your side picks between them — the device and the place you are standing in do that, and the answer can change between a street in Kadıköy and a village road above the coast.
Reception belongs to the terrain either way. A valley floor among the fairy chimneys, a mountain road climbing away from Kemer, the middle of a Bosphorus crossing: none of them behaves like a city centre, and no plan rewrites what a landscape does to a signal. Read the listed networks and the territory on the plan you buy, and plan the offline half of the trip around them.
Set it up at home — in Turkey that advice has teeth
Everywhere else, preparing the eSIM before departure is a convenience. Here it is closer to insurance. Some international travel-eSIM providers' websites, apps and top-up paths may be restricted when they are reached through networks in Turkey. That is not a ban on eSIM technology, and a profile prepared beforehand can follow different rules from the storefront it came from — but the shop you would turn to for help may be the page that will not open.

Why not simply buy a Turkish SIM once you are there
Because a local line brings a rule that catches visitors out. Turkey runs a handset registration system: a foreign phone used with a Turkish local SIM beyond a limited period has to be registered, which costs a fee and an errand nobody plans a holiday around. A travel eSIM is a different arrangement — it roams on a partner network instead of issuing you a Turkish subscriber line — so that errand does not enter a two-week trip. - The airport you are actually standing in — the M11 from IST and the M4 from SAW serve different halves of the city, as do the coaches.
- A transfer driver's message — the Antalya resort strip runs a long way past Kemer, Belek and Side, and the pickup point is seldom where you assumed.
- Ferry and dolmuş times — crossing to Kadıköy, or moving between Çeşme and Alaçatı, is settled by a timetable that shifts with the season.
- The balloon message — a Cappadocia flight is confirmed or called off for weather very early, on whichever line is switched on.
- The address in Turkish spelling — a street name a driver can read beats a pin dropped in a hurry.
Tip: The Cappadocia valleys are where the phone stops being the plan. Between Göreme and Ürgüp the road is ordinary, but the field tracks down among the fairy chimneys — and the field a balloon actually comes down in — interrupt reception, which is the landscape rather than the eSIM. How much data a Turkey trip takes
The Turkey plans run 1, 3, 5, 10, 20 and 50 GB, with validity from 7 to 180 days by size. Most trips sit in the lower half: roughly 1–3 GB for a long weekend in Istanbul, 3–5 GB for a resort week whose evenings run on hotel Wi-Fi, and 8–12 GB for a fortnight moving between towns with a laptop along.
What moves the number is movement, not the length of the holiday. A beach day costs almost nothing; a driving day is another matter, between live navigation over the mountains behind Antalya, a re-route when the road turns out worse than the map suggested, and the map downloads themselves. Keep the number your family dials
On a dual-SIM phone the home line stays live for a bank code or the call you cannot miss, while the eSIM carries the data. Label both lines before you fly so the settings screen makes sense at speed, and check which line is chosen after a restart — phones have opinions about this. Calls, texts and voicemail on your own number stay under your home agreement, which a travel data plan does not change.
Sharing the connection with a laptop
Where the selected plan and the device allow it, the phone can pass its connection to a laptop as a hotspot — useful in a coastal hotel whose Wi-Fi stops at the lobby. Read the plan details before checkout to see whether tethering is included, because that is a property of the plan rather than of the country.

A Turkey plan is written for Turkey. It establishes nothing about service in Greece or Bulgaria, on a ferry, or in Cyprus, however short the hop from a Turkish coastal town. Check every stop against the plan you are buying, or arrange those legs on their own.
